Grated Sweet Potato

This is one of my favorite things in the world to eat during the holidays. With a little tweaking to a old family recipe, I've made it vegan friendly so that even now it can be eaten by all!

INGREDIENTS
  • 8 medium/ large sized raw Sweet potatoes (Be sure to have a grater on hand)
  • 4 oz of melted vegan butter.
  • 3 tablespoons cinnamon.
  • 1 cup of sugar (any sugar is fine except confectioners powdered sugar)
  • 1/4 vanilla extract.
  • 1 cup almond milk (sweetened or unsweetened)
  • Raisins (optional)
  • 1 cup of shredded coconut (sweetened)

COOKING INSTRUCTIONS

1. Wash and grate sweet potatoes into a large mixing bowl.
2. Mix in butter, cinnamon, sugar, vanilla extract, almond milk, and coconut into grated sweet potatoes.
3. Preheat oven to 350 degrees.
4. Pour sweet potato mix into oven safe pan and let cook for 25 minutes.
5. Stir mixture and Add raisins. Place back into oven and let cook for an additional 35 minutes or until dish is brown on top.
6. Remove from oven and serve either hot or cold.
