Coconut Pie

7 simple ingredients and you too can have this delicious coconut pie. It's holiday season and who doesn't like a good pie!


INGREDIENTS

  • 8-10 oz of shredded sweetened coconut.
  • 1/2 cup almond milk (sweetened)
  • 1 Tbs of vanilla extract
  • 1 Tbs of caramel extract
  • 1 cup sugar
  • 2 oz melted vegan butter
  • 1/4 cup apple sauce
For homemade crust :
  • 1 cup flour
  • 3 tbs olive oil
  • 1/4 cup water
  • Cinnamon/salt (optional)
(repeat as often as needed)

 COOKING INSTRUCTIONS
1. Preheat oven to 325 degrees.
2. Mix in a medium bowl coconut, almond milk, sugar, vanilla and caramel extract, melted butter, and apple sauce.
3. Pour into homemade/store bought crust and bake in oven for 30-45 minutes. (Note that the center may still be slightly jiggly but this is ok. When pie cools it will become firm.)
