Lasagna!

The mind really does play tricks on itself. I am reassuring you that despite the cheesy, meaty image above it is still a plate of nothing more than vegetables and grains. If you follow my directions below you too can make this mind blowing vegan lasagna!

INGREDIENTS
  • 2 13.7 oz bags of Gardein's "The Ultimate beefless ground beef"
  • 2 8 oz bags of So Delicious Dairy Free 'Cheddar Jack' Shredded
  • 1 large zucchini peeled and sliced (optional)
  • 1 diced green pepper
  • 2 24 oz jars of traditional pasta sauce
  • 1 Tbs of Oregano
  • Salt
  • Pepper
  • 1 16oz box of lasagna noodles


COOKING INSTRUCTIONS

1. Preheat oven to 350 degrees.
2.Warm 'ground beef', green pepper, oregano, salt, pepper, and pasta sauce in a large pan on low-medium heat. Cover and let simmer. Stir occasional.
3. Bring to boil water in a large pan. Add lasagna noodles and let boil.
4. Assemble in oven safe pan a layer of cooked lasagna noodles. Then a layer of zucchini, cheese, 'ground beef', and then repeat.
5. Cook in oven for 35 minutes or until all cheese is melted.
6. Remove from oven and enjoy!
