Out The Bag in 35: BBQ "Meat"balls, Broccoli, & Mashed Potatoes

Mmm look at that, an entire plate of veggies and beans. Yes, I said that right. Everything in the above image is vegan approved. And the best part, this meal prep time clocks in between 35 to 45 minutes. You can go hunting for the ingredients at your local plant based diet friendly stores. For my shopping list I went to my local Trader Joe's.

INGREDIENTS
  • 1 Tbs salt
  • 1 small bag of frozen broccoli florets
  • 1 bag of frozen fully cooked Falafel balls
  • Oregano
  • 1 28 oz Sweet Baby Ray’s Honey BBQ sauce (Optional flavor choice)
  • 1 Tbs cumin
  • 1 5 pound organic red potatoes
  • Black pepper
  • 2 Tbs Almond milk

COOKING INSTRUCTIONS
(Mashed Potatoes)

  1. Add whole red potatoes to a medium pot of water, place on high heat. Add a pinch of salt (optional) to the water, cover with lid and let cook.
  2. Let cook for 30 minutes or until potatoes are soft. Drain water from potatoes. Mash the potatoes.
  3. Add salt, oregano, cumin ,and black pepper (Optional). Stir in almond milk to make potatoes creamy.


(Falafel Balls)

  1. Preheat oven to 375 degrees. Place frozen falafel onto a oven safe cookie sheet.
  2. Let cook for 25 minutes or until falafel balls are no longer cold.
  3. Remove from oven and add BBQ sauce. Place back in the oven for 10 minutes to allow the sauce to stick before enjoying.

(Broccoli)

  1. Pour frozen broccoli into microwave safe bowl. Fill bowl with enough water to fully submerge broccoli.
  2. Cook on high for 8 minutes then drain of water.
  3. Place broccoli back into the microwave for 6 minutes. Remove from microwave and add salt and pepper then enjoy!
