Duncan Hines, Hold the Eggs: Pineapple Honey Cake


This glorious cake all started with  box of cake mix and a dream.  Surprisingly most regular boxed cake mix is only one or two ingredients away from being vegan. If you like the consistency of cobbler, this is the dessert for you. Below I've laid out exactly how to achieve this simple Pineapple honey cake.

INGREDIENTS
  • 1 bx of Duncan Hines, Pineapple Supreme Moist cake mix

  • 1 cup of water

  • 1/3 cup of vegetable oil

  • 1 Tbs of lemon juice

  • 1 can of 20z whole pineapple slices

  • 6 Tbs of instant mashed potatoes

  • 4 Tbs of honey

  • 1 Tbs of coconut oil

  • 4 Tbs of brown sugar


COOKING INSTRUCTIONS
(Cake Mix)

  1.  Preheat oven to 350 degrees. 
  2. Blend cake mix, water, oil, mashed potatoes, and honey in a large bowl until well blended. (Make sure to mash to avoid pockets of dry batter).
  3. Place to the side to make filling.


COOKING INSTRUCTIONS
(Filling)
  1. Melt coconut oil in a small sauce pan on medium heat. Stir in brown sugar.
  2. Stir until brown sugar and coconut oil began to caramelize, reduce heat to low.
  3. Add lemon juice and 1 Tbs of honey. Stir mixture and remove from heat.

COOKING INSTRUCTIONS
  1. Pour half of cake mixture into a greased oven safe pan. 
  2. Drizzle a layer of the filling on top of the cake mix. Add 3-4 pineapple slices.
  3. Drizzle more honey on top (optional)
  4. Pour the rest of cake mixture into the pan. Spread until evenly coats the pan. 
  5. Repeat step 2. Drizzle more honey on top.
  6. Cook in oven for 1 hour or until cake is firm.  *The top will be semi moist*
*Optional: Drizzle fresh cherry juice on top and add fresh cherries on top. Drizzle more honey on top if desired*
